Recipe: Tex-Mex Fondue
Appetizers and SnacksTEX-MEX FONDUE
1/4 cup tequila or chicken broth
1 garlic clove, minced
1 lb. Velveeta Mexican Process Cheese Spread with Jalapeno Pepper, cubed
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
FOR SERVING:
cooked chicken chunks
jicama chunks
red, green or yellow bell pepper chunks
tortilla chips
TO COOK IN THE MICROWAVE:
Mix together tequila or broth and garlic in 1 1/2 quart bowl. Microwave on HIGH 2-3 minutes or until hot. Stir in process cheese spread and lime juice. Microwave 3 to 4 minutes or until process cheese spread is melted, stirring every 2 minutes. Stir in cilantro. Serve as directed.
TO COOK ON THE STOVETOP:
Heat tequila and garlic in medium saucepan or fondue pot. Bring to boil. Reduce heat: simmer 1 minute. Add process cheese spread and lime juice; stir until process cheese spread is melted. Stir in cilantro. Serve as directed.
TO SERVE:
Keep fondue hot while serving. Dip cooked chicken chunks, jicama chunks, red, green or yellow pepper chunks and tortilla chips into fondue.
Makes 4 servings
