I usually just make half the recipe for us and make one cake. There are just the two of us so I have become a master at making half a recipe on most things. I would imagine you could use a larger pan and increase the baking time I would say about 10 min. Check it at 5 min with a toothpick and adjust accordingly. It is a very refreshing cake. Sometimes I drizzle the orange one with a chocolate glaze. I love the chocolate and orange flavors together. I often make the lemon one for Easter dinner.
