Recipe: Rocky Mountain Bar Recipes - 3

Desserts - Cookies, Brownies, Bars
Could you just drizzle caramel on one of these recipes? I think it might be a regional name for Rocky Road Bars.

Rocky Mountain Bars (AKA - Rocky Road Bars)

1/2 cup butter, melted
1 (1 ounce) square unsweetened chocolate, melted
1 cup white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
2 eggs
3/4 cup chopped walnuts (or any kind of nuts - pecans, etc. - my family prefers peanuts)

1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1 egg
2 tablespoons all-purpose flour
1/2 teaspoon vanilla extract
1/4 cup butter, softened

1/4 cup chopped walnuts (or preferred nut)
1 cup semisweet chocolate chips
2 cups miniature marshmallows

1/4 cup butter
1 (1 ounce) square unsweetened chocolate, chopped
1/4 cup milk
3 cups confectioners' sugar
1 teaspoon vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a medium saucepan, melt chocolate and butter over low heat, stirring occasionally. Remove from the heat and add 1 cup sugar, 1 cup flour, baking powder, vanilla, 2 eggs and nuts. Stir until well blended. Spread evenly into the bottom of the prepared pan.
For the next layer, in a medium bowl, beat the 6 ounces of cream cheese (reserve 2 ounces of the package of cream cheese for the next layer) with the 1/2 cup of sugar, egg, 2 tablespoons of flour, 1/2 teaspoon of vanilla, and 1/4 cup of butter. Mix until fluffy and smooth. Spread evenly over the first layer.
Sprinkle the 1/4 cup of chopped nuts and chocolate chips over the second layer. Bake for 25 to 35 minutes in the preheated oven. Then sprinkle the miniature marshmallows over the top and bake for 2 minutes longer.
Begin to prepare the icing while the bars are in the oven. In a medium saucepan, melt together the 1/4 cup of butter, 1 square of chocolate, remaining 2 ounces of cream cheese and 1/4 cup of milk. Remove from heat and stir in 3 cups of confectioners' sugar and 1 teaspoon of vanilla. Beat until smooth. Pour over the marshmallows and swirl together. Refrigerate until firm,

Filling: 6 oz. cream cheese
4 TBS butter
1/2 cup sugar
1 large egg
1/2 tsp vanilla
2 TBS flour
1 1/4 cup chopped nuts
6 oz. semisweet chocolate chips
2 cups miniature marshmallows
Frosting: 4 TBS butter
1 oz. unsweetened chocolate
2 oz. cream cheese
1/4 cup milk

1 tsp vanilla
3 cups powdered sugar
Melt butter and chocolate; cool. Sift flour and baking powder. In medium bowl beat eggs, sugar and vanilla. Add chocolate mixture to eggs, beating well. Add flour mixture and nuts. Spread in buttered 9x13 pan; set aside.
Beat together cream cheese, butter and sugar until fluffy. Add egg, vanilla and flour. Beat well. Stir in nuts and spread batter over unbaked crust. Sprinkle with chocolate chips. Bake at 350 degrees for 30-35 minutes. Remove from oven and sprinkle with marshmallow. Return to oven for 2 minutes.
Melt together butter and chocolate. Cool. Add cream cheese, milk, vanilla and powdered sugar and beat until smooth. Spread over marshmallow layer. Cool

Crust:

Melt butter and chocolate; cool. Sift together flour and baking powder. In medium bowl, beat eggs, sugar and vanilla. Add chocolate mixture to eggs, beating well.
Add flour mixture and nuts. Spread in buttere 9xl3-inch set aside.

Filling:

6 ounces cream cheese, softened
4 tablespoons butter, softened
1/2 cup sugar
1 large egg
1/2 teaspoon pure vanilla extract
2 tablespoons all-purpose flour
1/4 cup chopped nuts
6 ounces semisweet chocolate chips
2 cups miniature marshmallows

Beat together cream cheese, butter and sugar until fluffy. Add egg, vanilla and flour. Beat well. Stirin nuts and spread batter over unbaked crust. Sprinkle with chocolate chips. Bake at 350 degreesfor 30-35 minutes. Remove from oven and sprinkle with marshmallows. Return to oven for 2 minutes.

4 tablespoons butter
1 ounce unsweetened chocolate
2 ounces cream cheese
1/4 cup whole milk
1 teaspoon pure vanilla extract
3 cups powdered sugar

Melt together butter and chocolate cool. Add cream
cheese, milk, vanilla and powdered sugar and beat until smooth. Spread over marshmallow layer. Cool and cut in
to bars.

Brownie-like texture with rocky road candy flavor
These are one of my favorites. But, it takes a lot of
time to make!
