The other day I posted a recipe for stuffed peppers on the cooking for 1 or 2 board. It was a new recipe I tried from the Taste of Home magazine & I really liked it. It was made with ground turkey & no tomato sauce, but I think it would also taste good with tomato sauce added to it. It could also be easily doubled if you are cooking for more than 2. Check it out if you are interested. I think I remember seeing some other recipes for stuffed peppers posted recently on that board.

Usually, when I make stuffed peppers I don't follow a recipe, but I make up a mixture of browned ground beef, onions, garlc, rice, & cheese. I don't even measure how much of each - I just throw it in. Tomato sauce can also be added easily to this mixture - & also put on top of the peppers.
