PECAN PUDDING
1/2 cup flour
1/8 tsp. cream of tartar
3 eggs
1 cup dark corn syrup
1/2 cup sugar
2 tbsp. butter or margarine, melted
1 tsp. vanilla
1 cup chopped pecans, divided use
Powdered sugar
Light cream (optional, for serving)
Combine flour and cream of tartar; set aside.
In a mixing bowl, beat eggs with an electric mixer on high about 5 minutes. Add corn syrup, sugar, margarine and vanilla. Beat well.
Fold in flour mixture. Fold in half of the pecans. Transfer to a greased 10x6x2-inch baking dish. Sprinkle remaining pecans atop.
Bake at 375 degrees F for 30 to 35 minutes.
To serve, spoon into dessert dishes. Sift powdered sugar over each serving. Serve with light cream, if desired.
Makes 6 to 8 servings
