Recipe: Zucchini Brownies (using cocoa powder, coconut and almonds)

ZUCCHINI BROWNIES

3 cups peeled and grated zucchini
1 1/2 cups sugar
2/3 cup oil
3 cups flour
1/2 tsp salt
2 tsp baking soda
1/3 cup unsweetened cocoa powder
3 tsp vanilla
1/2 cup coconut
1/2 cup chopped almonds
Powdered sugar (for dusting top)

Preheat oven at 350 degrees F. Spray a 8x15-inch baking pan with nonstick cooking spray.

Mix all ingredients together in a 2-quart mixing bowl. Spread batter in prepared pan.

Bake for 25 minutes, or until inserted toothpick comes out clean. Cool in pan on rack. Dust top with powdered sugar when cooled.

Makes 30 servings, each 2-inches square
