High Altitude Cooking

I need help & advice. Am a new comer to the world of cooking. To make matters worse, I live in Colorado - not many cook books give advise about high altitude cooking. I tried baked potatoes the other day - and it turned out dry. (I pricked it and rubbed salt, pepper, and some other seasoning and baked it at 425F for 90 mins). And i tried to bake chicken (with its skin) too - even that turned out dry. I pricked the meat and marinated it overnight. Did I do something wrong?

P/S I feel very vulnerable posting my failures for all to read.
