Recipe: Okra, Tomato and Corn Casserole

OKRA, TOMATO AND CORN CASSEROLE

8 cups (2 lbs.) sliced fresh okra
2 cups peeled and chopped tomatoes
1 cup fresh corn off the cob
1 cup chopped onion
3/4 cup chopped green bell pepper
1 tsp. ground cayenne pepper
3/4 tsp. salt
2 tbsp. chopped fresh parsley

Preheat oven to 350 degrees F. Spray a 4-quart casserole with non-stick vegetable cooking spray.

Combine all ingredients and mix well. Place in prepared casserole.

Bake, uncovered at 350 degrees for 1 hour. Stir several times during baking.

Serves 12 to 14
