Recipe(tried): Lee's Famous Recipe Red Beans and Rice

Hello-

I worked for Lee's Famous Recipe back in Michigan in the early 90s as a cook. I do remember the bulk of the recipe and have made it at home several times myself modified.

It's been 40 years since I saw the recipe, but this is what I remember making A LOT.

LEE'S FAMOUS RECIPE RED BEANS AND RICE

1 pound medium sausage
5 stalks celery, diced
1 small onion, diced
2 cans (15 ounces each) diced tomatoes
2 cans (15 ounces each) red kidney beans
2 jalapeno peppers, chopped finely (seeded and de-veined)
2 bay leaves
3/4 cup uncooked rice
Salt and pepper to taste
Beef broth (if needed)

In a large saucepan brown sausage; drain most the grease. Add onion and celery and saut until soft, stirring often.

Add the diced tomatoes, and kidney beans. Do not drain the beans. Add diced jalapenos and bay leaves and bring to a boil. Salt and pepper to taste.

Add rice, cover and reduce the heat. Simmer until rice is done. There should still be enough liquid in the pot when done, if not you can add a little beef broth to get the mix a little "soupy".

We used to eat this served over one of our buttermilk biscuits and a scoop of mashed potatoes! It was delicious on a cool Michigsn day.
