Hi Stacy, I have used both ricotta and small curd cottage cheese. And I have mixed them together. Eggs helps the cheeses stay together. I use a good mix of the packaged shredded Italian cheeses that are availabe now. For some reason plain old mozzarella is very bland to me now. I don't boil my noodles either. Just cover it all with foil and bake. Have found the lasagna is not as runny by doing it this way. My family also prefers a good mix of a good Italian sausage and plain old burger browned together. You just have to play around and adjust everything to your own tastes. Hope this helped you out some.
