This is the only recipe I could find. It is partially in Fijian.
PURINI
3 coconuts (me kari)
2 1/2 cups brown sugar
3 1/2 cups self raising Flour
2 tsp baking soda
2 eggs
1 tsp nutmeg powder (not necessary though)
250g margarine butter
3 to 4 good size bananas- prefer soft over-ripe banana's (mashed)
23 cups of lolo
1. For the lolo put sugar in pot, once it crystalise then add your coconut cream. Turn off stove once the lolo is smooth & runny.
It's advisable to cook lolo one day before you bake purini! For the left over lolo can be pour in a tight lid container and store in the fridge and it can be use next time you bake purini!
2. In a large mixing bowl, add 2 cups of brown sugar and butter and mix, then add the eggs and whisk well till the sugar is dissolve or the mixture is smooth.
Then add your banana, flour & nutmeg and your lolo.
Remember to pour lolo bit by bit and continue checking the mixture!
Then mix well and thoroughly!
Grease a 25cm or 30cm round pot is suitable to cook purini, pour mixture in pot and cover with lid and into the big pot of boiling water.
Cook time preferably 1hr 30 mins!
(NOTE) While preparing your purini mixture, you must boil a big pot of water ready to steam your purini..
After 1hr of cook time, continue to check purini every 10 mins, use skewer.
ai koya qori keva qai dua tale nomu taro se sega ni matata vei iko...qai taro ga mai...! Purini vinaka me morning or afternoon tea or for desserts with ice-cream or vanilla custard..!
