How many hors d'ouevres/person if the party is after dinner, an evening party?

We are hosting a hospitality suite at an insurance conference that will be held after they have had dinner, from 9 pm to 12 am. It will be a drop in type event, with maybe 30-40 people coming and going at all times over the course of three hours. There will be a DJ and an open bar.
