Nikki,
It's really difficult to get some cookies to remain fresh when they don't contain any preservatives. May I suggest that you bake some cookies that already are hard to begin with like a biscotti or mandelbot? It's a cookie that's formed into a loaf, baked and then sliced on a diagonal and then dried at a low temperature. You can make several different varieties including adding different dried fruits and nuts and even chocolate chips, or white chocolate chips. You may also try some of the cake mix cookies. They may last longer due to the preservatives.
If all else fails, make a great basket of goodies including different v-day candies...kisses and hugs and get some store bought cookies and re-wrap in colored saran wrap.
