Rach,
You may want to try grilling some fresh veggies like eggplant, red and green peppers, some zucchini. You could make some veggie Kabobs on skewers and put tomatoes, onions, mushrooms etc. You could serve this with some rice and maybe some breadsticks and a nice green salad. Follow with some fresh fruit for dessert! I hope this helps!
