Hi Jim,

No, that's not too fast. Some of the new machines can bake a loaf in less than an hour - I thought that might be a factor. Are you using recipes from the book that came with the machine or have you tried other recipes? I'm wondering if you try a half-recipe or one loaf recipe of a bread you've made without the machine if you get the same results. Another test would be to mix the dough in the machine and bake it in the oven and see if the baking method is the difference you're tasting.
