Margaret, if you type clay pot into the search function here on TKL,
Misc. you will find quite a bit of information and some recipes. I don't have a clay pot, but have always heard they make an excellent baked chicken. I do know they have to be soaked before they are used, and I see there are posts about that also. There are also some cook book recommendations. Perhaps you can find some information you can use.
