TOAST WITH TURKEY BURGERS
"Something from my upbringing led me to like burgers on toast rather than on a bun. Maybe it's because bread has more flavor than commercial buns. When the bread is toasted over an open flame and you've topped the burgers with plenty of ketchup, onions, lettuce, and tomatoes, you can't go wrong. I like ground turkey thigh because it is full of flavor. Sauteed onions are blended into the meat before cooking, making the burgers moist and unique."
2 tablespoons olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 1/2 pounds ground turkey
1 teaspoon Worcestershire sauce
3 tablespoons ketchup
8 bread slices*
Salt and freshly ground pepper
Condiments, such as ketchup, mustard, sliced tomatoes, pickles, lettuce, and sliced red onion (for serving)
In a small skillet over medium heat, warm the olive oil. Add the onion and cook, stirring occasionally, for about 5 minutes, or until soft. Stir in the garlic and let cool to room temperature.
In a medium bowl, combine the onion mixture, ground turkey, Worcestershire sauce, and ketchup, and divide the meat into 4 equal portions. Form each into a patty about 1-inch thick.
In a large skillet over medium heat or on a medium-hot barbecue grill, cook the burgers for 5 to 8 minutes per side.
Meanwhile, in a toaster or on the grill, toast the bread.
Season the burgers with salt and pepper to taste and place each between 2 slices of toast. Serve with your choice of condiments.
*Bread Suggestions: Sourdough, wheat, white, Italian, onion potato, focaccia, hard rolls.
