I have a Chicken Bucket....you have to use a cooking thermometer to know when the oil is 350F, then after you brown the chicken and screw the lid on, you keep the burner on medium - that usually maintains the temp pretty well. There are several recipes in the book, is there a specific one you want? The chicken is delicious!! :o) Sandy
