Micha, If your new butcher block is hardwood such as maple, I can give you a couple of suggestions. I think that I saw on Foodtv, that for cleaning a hardwood cutting board, you use baking soda in paste form (mixed with a little water.) After you clean that off, use lemon or lime juice to further clean it. Since hardwood does eventually get dry (you will be able to see the wood looking dry) you can use vegetable oil to rub into the wood to restore moisture to the wood. I hope that this helps you at least some.
