Recipe: Electric Skillet Chicken Quesadillas

Oil for cooking
2 each boneless skinless chicken breast
Salt and pepper to taste
2 lemon wedges
1 medium white onion, sliced
1 bell pepper, sliced
3 jalapeno peppers, sliced
1 whole green hot chili pepper, sliced
2 cloves of garlic, chopped
2 large flour tortillas
1/2 cup chopped fresh cilantro
1 cup shredded cheddar cheese
Preheat skillet to 350 degrees F and add cooking oil (about 2 tablespoons).
Coat chicken lightly with salt and pepper and add to skillet. Allow chicken to cook approximately 4 minutes on each side. Coat chicken with juice from the two lemon wedges, remove chicken; set aside.
Add 1 tablespoon of oil to skillet and increase temperature to 400 degrees F. Add onions, peppers, and garlic and allow to cook until tender but still somewhat crispy, remove from skillet and set aside.
Place one flour tortilla in skillet; arrange peppers, chicken, cilantro and then cheese and then another tortilla on top. Cook on 350 degrees for 3 minutes on each side. Remove from skillet allow to cool.
Cut into wedges.
