Recipe: Chile-Lime Baked Fries

Side Dishes - Potatoes
CHILE-LIME BAKED FRIES

2 potatoes
1 tablespoon canola oil
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons mayonnaise
Juice of 1 medium lime
1/2 teaspoon of chile powder (your choice of chiles)

Preheat oven to 450 degrees F.

Peel the potatoes and cut them into 1-inch-thick wedges.

In a medium bowl, coat the potatoes with the oil, salt and pepper. Spread evenly on a sheet pan.

Bake for approximately 15 minutes, until golden brown.

While the potatoes are roasting, mix the mayonnaise, lime juice and chile powder.

Remove the potatoes from the oven and toss with the mayonnaise mixture. Serve immediately.

Serves 4
