Mom's Macaroni Saute

This is cooked in a skillet but could easily be transferred to a casserole dish prior to the function. My mother thinks it could be and OLD Betty Crocker recipe.

MOM'S MACARONI SAUTE:

2 cups elbow macaroni,UNcooked
1/2 cup chopped onion
1/2 cup chopped green pepper
1 clove garlic minced
1/2 cup salad oil
3 cups tomato juice
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoon worcestershire sauce

SAUTE onion, green pepper, garlic and macaroni in oil till macaroni turns slightly yellow. ADD tomato juice and seasonings. BRING to a boil, cover and simmer 20 minutes.

Most, if not all of the liquid is absorbed by the uncooked macaroni, so keep an eye on it towards the end.

Growing up, I remember that often my mother added a can (or 2?) of canned shrimp right near the end of the cooking time. I think a sprinkling of black olives wouldn't hurt either. :) ....
