Inside-out Manicotti-EASY!!!!

15 oz. Ricotta, part skim
8 oz. Mozzarella, grated
1 large egg
1/8 tsp ground pepper
1/8 tsp ground nutmeg
8oz. mosticelli or ziti, cooked and drained
1 jar of spaghetti sauce
Mix egg, cheeses, pepper and nutmeg and set aside. Heat oven to 350 . Cover bottom of 2 1/2qt oblong dish with a layer of sauce, 1/2 ziti, 1/2 chese mixture. Add another layer of sauce, remaining ziti and cheese mixture. Top with sauce and sprinkle with parmesan cheese. Bake 20-25 minutes until heated through.
I usually double this recipe and put in a larger pan. Also feel free to add other things such as sliced mushrooms. Once I brought this to a potluck and I wanted to add some meat but was in a hurry so I heated up a box of frozen meatballs and cut them into chunks and added them to the layers and it was quite good!
