My picky eater is the worst

At 18, and out of the house, it is now his own problem about what he will
eat... but while at home, I had to really rack my brains to provide meals that
he would eat. He would eat nothing red, and no ground meat. No vegies or
fruit, except for corn (but not creamed corn). After assurances from my
pediatrician that he would not starve to death, I began to fix regular meals
and he could choose from that what he would put on his plate, and what he would
pass up. I did do special things for him like, if we were having grilled
hambergers for dinner, I would make him his garden burgers (healthier anyway).
OR if we had chili, I would take out a portion of it for him, prior to adding
the ground meat and tomatoes. But other than that, there were no special
meals made for him. He always seemed well nurished and seldom claimed to be
hungry. If I knew he hadn't eaten enough I would sometimes allow him to make a
peanut butter sandwich, but there were no short order cooking going on.

He is still picky, and he tells me that it is awful to only eat Ramen for days,
and he wishes he would "outgrow" the pickiness soon. Or learn to cook more
foods. I found that while he was home, I was the one who was the most stressed
out about HIS pickiness, not him. So, I tried to give him back the ownership
to his own food preferences... he could choose from what we had to offer for
dinner. Period... for the most part.
