Recipe: Low Fat Glazed Chicken (using chicken breasts and orange juice, crock pot)

It takes less than 10 minutes to prepare this in the mornings and have it ready when you come home.
6 oz orange juice, frozen concentrate, thawed
6 boneless, skinless chicken breast halves
1/2 teaspoon marjoram
1 dash garlic powder (optional)
1 dash ground nutmeg
FOR THE SAUCE:
2 tablespoons cornstarch
1/4 cup water
Combine thawed (undiluted) orange juice concentrate in a bowl along with the marjoram, garlic powder and nutmeg. Dip each piece into the orange juice mixture to coat completely. Place in crockpot. Pour orange juice mixture into crockpot over chicken.
Cover crock pot and cook on low setting all day. Remove chicken to a serving platter.
Pour the sauce that remains in crockpot into a saucepan. Mix the cornstarch and 1/4 cup water and stir into the juice in pan. Cook over medium heat, stirring constantly, until thick and bubbly.
Serve the sauce over the chicken.
Yield: 6 servings
