No recipe, but....

one of my grandmothers always makes great fried pies with apricots. My other grandmother makes both apple & peach. Neither one of them follows a recipe. To make the filling, they just cook the fruit til soft (if necessary) with sugar, cinnamon, nutmeg or appropriate spices. I've helped both of them do this numerous times since I was a little girl, but I still don't think mine would ever turn out tasting as good as theirs do! I guess it's just something old southern cooks just acquire!

I hope someone can post some recipes for you since this probably isn't much help!
