Oh My Gosh, I forgot the temp setting!!!

Gosh, I forgot to tell you all about the temp setting didn't I? Roast the veggies at 350 for the first hour, take out and keep warm on a platter, then at 375 for the next hour and roast till the thermometer inserted in the meat reads 140. An additional 1/2 hour does it for me so that the meat is tender. During the last half hour is when I throw the veggies back in. All in all, the entire cooking time for the meat should be about 1 1/2 hours.

That's wonderful that you get 2 to a package. Where I live, they are packaged one only and tied up in string.
