peanut butter substitution ideas ..

Wish you'd asked last week! I just yesterday took a cookbook back to the library -- by Jeanne Jones (you may have seen her columns in some papers - people send her recipes and she lowers the calories/fat, etc. Plus she has other cookbooks. I think it was called CANYON RANCH or CANYON RANCH COOKING or COOKBOOK.

One of the recipes in it was for lowering fat/calories in peanut butter - she mixed it with something .... but I don't have an idea in my head right now what it was! She also used this version in several recipes. I was going to copy a few things -- but was too busy.

If interested, maybe you can go to Barnes & Noble, etc. and take a peek and sit down and copy a few notes ....

I couldn't renew it (tried) as it was one of the library's new books. So I'll try again after awhile.
