re: altering cheesecake recipe for mini-cheesecakes

Happy Thanksgiving day to you. Whereas you may need to alter your oven temperature & baking time to accomadate the differance in pan size you must understand Jane that one cause that makes a "cheese-cake deflate as you have described is that you are beating too much air into the custard concoction. I am sure you know that a Cheese-cake is not a cake!!!!. It is a "CUSTARD!!!!. Hence it must be treated like a custard. Mix the concoction at least 15/20 minutes at a very slow speed. The sugar must be thoroughly mixed before you stop the machine. This way you do not beat unwanted air into your custard, This is why your cake sinks. Alter your mixing method & come back & tell us how well your cheese-cake came out. Have a nice day young lady.
