Recipe: Molded Waldorf Salad - 2 recipes (Knox Gelatine, 1960's and 80's)

Hi Ineca! I looked through all of my Knox Gelatine recipe booklets (the oldest dating back to the 1920's!) and found these 2 recipes for Waldorf Salad. I hope one is "it"! - Betsy

MOLDED WALDORF SALAD



1 envelope Knox Unflavored Gelatine
1/4 cup sugar
1/2 tsp. salt
1 1/2 cups apple juice, cider or water, divided use
1/4 cup lemon juice
2 cups diced unpeeled apples
1/2 cup diced celery
1/4 cup chopped walnuts
1/4 cup raisins
FOR SERVING:
Salad greens
French dressing

Mix (dry) gelatine, sugar and salt in a saucepan. Stir in 1/2 cup apple juice. Stir over low heat until gelatine is dissolved, about 2 to 3 minutes.

Add remaining 1 cup apple juice and lemon juice, chill until mixture is slightly thickened.

Fold in apples, celery, walnuts and raisins. Turn into 4-cup mold and chill until firm.

Unmold on greens, serve with French dressing.

Diet Tip: Use artificial sweetener; skip raisins and nuts.

Makes 4 to 6 servings

CIDER WALDORF SALAD

2 envelopes Knox Unflavored Gelatine
2 1/2 cups cold apple cider or apple juice, divided use
1 cup apple cider or apple juice, heated to boiling
2 tablespoons lemon juice
1 1/4 cups chopped apple
1/2 cup diced celery
1/2 cup raisins
1/2 cup coarsely chopped walnuts
Apple slices (optional, for garnish)

In large bowl, sprinkle unflavored gelatine over 1/2 cup cold cider; let stand 1 minute.

Add hot cider and stir until gelatine is completely dissolved. Stir in remaining 2 cups cold cider and lemon juice. Chill, stirring occasionally, until mixture is consistency of unbeaten egg whites.

Fold in remaining ingredients, except apple slices. Turn into a 6 1/2 cup ring mold or bowl; chill until firm.

Garnish, if desired, with apple slices.

Makes about 12 servings
