Barbara,

Ananas is french for pineapple. Since I don't know what kind of crispy duck you had in the that particular Chinese restaurant, I can't help you out here... However, you could try most Chinese crispy duck recipe that calls for s "sweet and sour sauce". Just use pineapple as an ingredient in the sauce (and get rid of sugar and some vingegar, depends on the sweetness and sourness of the pineapple used.) Then you should get a very close recipe to what you tasted...
