re: canning beets

If your pressure canner is deep enough, use it like a water bath canner. It needs to be deep enough to cover over the tops of the jars with water by 1-2 inches and have room to boil. You just sit the lid on, like you would a regular pan, do not tighten it.

You could pressure can them, but I don't have any processing time for them, other than using the regular processing times. They would be softer, though if you pressure can them.

If you have a deep enough stock pot, you can do the same. Use a folded towel in the bottom of a stock pot if you don't have a rack, or wire together some canning jar rings, or use a cake cooling rack. Anything to keep them up off the bottom from breaking.
