Recipe: Arby's Chicken Salad Sandwiches (3) (copycat recipes)
SandwichesBETTER THAN ARBY'S CHICKEN SALAD SANDWICHES
FOR THE CHICKEN SALAD:
1 (13 ounce) can chicken, drained
1/2 apple, sliced and chopped small
1/4 cup shredded carrots
1/4 to 1/2 cup sliced celery (or to taste)
1/2 cup red grapes, halved
1 cup mayonnaise or ranch dressing
1/2 cup chopped pecans, toasted
FOR THE SANDWICHES:
2 to 6 slices bread (for sandwiches)
2 to 4 leaves lettuce
1 sliced cucumber
Combine the salad ingredients together. Serve on bread or toast with sliced cucumber and lettuce. Spread additional dressing or mayonnaise on bread as desired.
Servings: 4

IMITATION ARBY'S CHICKEN SALAD
FOR THE SALAD:
seedless red globe grapes, halved or quartered
apples, coarsely chopped
cooked chicken, cut in cubes or small shreds
finely chopped walnuts or pecans (to taste)
OPTIONAL ADDITIONS:
celery, finely chopped
cucumber, chopped (seeds removed)
hard boiled eggs, chopped
onion, chopped
pickles, chopped
raisins
chicken fajita seasoning mix
horseradish
mustard
sour cream
wasabi or wasabi mayonnaise
FOR THE DRESSING:
mayonnaise or Miracle Whip salad dressing
FOR THE SANDWICHES:
thick multi grain bread (like Arby's uses)
(you can also use pita, tortillas, or cream puff shells)
Combine equal amounts of grapes, apples, and chicken. Stir in nuts and optional additions, if desired. Stir in mayonnaise to make desired moistness. Make sandwiches using desired bread.
