re: Ceviche

Dear Barbara:
Ceviche is a original and typical food of Peru. Its copied in other countries like Ecuador and Mexico. But the original recipe is ours. This is due to the lemon used that only grows in Peru.
Ill try to get you a good recipe. But its as simple and chopping raw fish or seafood (some of this must be cooked previously..not fish though) and squeeze lemons all over the meat and let it cook with the lemon. Since the level of acidity of our lemon is very strong the cooking is somewhat fast. You may add some garlic and seasoning like salt and pepper to it and serve it with slice onion and read hot chili or "rocoto" over it. Accompany it with sweet potatoe and "choclo" corn...simply delicious. Hope one day you can come to Peru and taste it yourself..,. but i know in Florida there are several peruvian restaurants where you can try it too.
