Recipe: Cracker Barrel Fried Apples

FRIED APPLES FROM CRACKER BARREL

IN MEDIUM SKILLET COMBINE:
2 cups apple juice
4 large golden Delicious Apples, unpeeled but cored and sliced in 1/2-inch thick wedges

Simmer gently and turn apples often with spatula until fork tender, but not mushy. With slotted spoon remove apples to greased oven dish.

INTO BLENDER PUT:
1/2 cup more apple juice
2 tbsp cornstarch
1 tsp apple pie spice
4 tbsp sugar

Blend briefly just till smooth. Stir into hot juice in skillet and cook, stirring constantly on med-high till it bubbles and thickens a bit. Turn off heat.

Pour over the apple slices. Serve warm as side dish or dessert. Refrigerate leftovers to use in a few days. Freeze to use in a few months.

Serves 6
