Recipe: Okeechobee Steak House Shrimp Scampi

SHRIMP SCAMPI

8 oz lightly salted butter
4 oz Chablis
2 tbsp tarragon vinegar
2 tbsp Worcestershire sauce
2 tsp chopped garlic
1 tsp chopped shallots
1/4 tsp dry mustard
1 1/2 lb shrimp, shelled and deveined
8 oz uncooked linguini
Fresh chopped chives (for garnish)

In a mixing bowl, place butter; let stand 1 hour until softened.

Once softened, add Chablis; mix until creamy. Add vinegar, Worcestershire, garlic, shallots and dry mustard; mix until thoroughly blended. Set aside.

Meanwhile, cook shrimp and linguine; set aside.

When ready to serve, slowly heat sauce, so the mixture does not break and will stay creamy. Pour over cooked shrimp and linguine.

Makes 3 servings
