I am sorry, but you will not be able to safely can the eggplant, it must be frozen.
The only recipe I know of personally that is safe to can with any eggplant is a vegetable antipasto. It must be canned exactly as designed to prevent botulism. It has all sorts of other vegetables. I think the recipe is posted in a prior post. You can do a search in the search box above the posts for it.
