just a correction on one of these (I have found to be true and I have heard it from a lot of Italian chefs on TV):

Do Not Put Oil in The Pasta Water - when you do that the sauce does not stick to to the pasta. Also, do not rinse pasta when you gdrain it after cooking. This takes off some of the starch and you need that to thicken the sauce.

Aside from that, the tips are great.
