My just discovered tip about measuring the temperature of water when proofing yeast: using an instant-read thermometer, turn on the kitchen faucet till the water runs moderately hot, then stick the tip of the thermometer in the stream of water and adjust up or down.. When it registers the temperature called for in the recipe, measure out the water in a measuring cup, pour the water into your mixing bowl, add the yeast and proceed.
