MEATBALLS & SPAGHETTI SAUCE

3 6 oz cans tomato paste
9 cans water
1 # 2 can whole tomatoes
1 medium onion -- chopped
4 cloves garlic cloves -- chopped fine
1 teaspoon dried mint flakes
1 teaspoon parsley
1 teaspoon basil leaves
1 teaspoon oregano
1 teaspoon rosemary
3 bay leaves
1/3 cup sugar
1 7 ounce can mushroom
2 teaspoons hot sauce
2 tablespoons Worcestershire sauce
salt and pepper

MEATBALLS

1 1/2 LBS ground sirloin
1 medium onion -- chopped fine
4 tablespoons bell pepper -- chopped fine
2 eggs -- beaten
1 cup bread crumbs
3 tablespoons Parmesan cheese
3 garlic cloves -- pressed
salt
Sauce:
Combine all ingredients in saucepan and simmer for 3 hours, adding more water if necessary.
Meatballs:
Combine ingredients and form into balls. Brown in oven or frying pan. Add to sauce and cook together for another 2 hours. Pour over pasta.

1 1/2 cups sugar -- sifted
1 cup cake flour -- sifted
1/2 teaspoon salt
1 1/4 cups egg whites (10-12)
1 1/4 teaspoons cream of tartar
1/2 teaspoon vanilla
1 tablespoon instant coffee powder

Butter Icing

1/2 cup butter
1/4 teaspoon salt
2 1/2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
2 tablespoons coffee powder, instant
1 small packag almonds -- slivered
Cake:
Add 1/2 cup of the sugar to flour. Sift together four times. Add salt to egg white and beat until foamy. Sprinkle cream of tartar over eggs and continue beating to soft peak stage. Add remaining cup of sugar by sprinkling 1/4 cup at a time. Fold in vanilla and instant coffee. (be sure coffee is powdered). Sift flour mixture over egg whites, about 1/4 at a time and fold in lightly, about 10 strokes each time. Pour into ungreased 10 inch round tube pan. Bake at 350 for 35 to 45 minutes. Remove from oven and invert pan on cooling rack.
Icing:
Cream butter, add salt and sugar, a small amount at a time, beating all the while. Add milk as needed and flavoring. Beat until light and fluffy. Add coffee. Toast almonds. After applying icing to cake, place almonds, one at a time, on icing for the best results.

STANDING RIB ROAST with Horseradish Sauce

6 pounds rib roast
garlic salt
onion salt
Lawry's Seasoning Salt
Lemon Pepper

SAUCE

1 8 OZ sour cream
4 tablespoons horseradish
2 tablespoons tarragon vinegar
1 teaspoon salt
4 tablespoons chives -- chopped

Set meat out at room temperature for 1 hour. Rub meat with a little oil and the coat with seasonings. Sometime before noon turn oven temp to 500. Put roast in oven and turn heat down to 350. Roast for one hour and then turn oven off. Leave in oven all day, DO NOT OPEN OVEN DOOR!
Thiry minutes before serving, turn oven to 350. With this timing the roast comes out medium rare. Adjust cooking time for a more well done roast.
SAUCE:
Mix sauce ingredients and serve with roast
