CARIBBEAN BROILED SKIRT STEAK
"Caribbean spices flavor this lean meat to give a hint of tropical heat."
1 1/2 lbs. beef skirt steak
FOR THE ORANGE RUB:
2 Tbsp. frozen orange juice concentrate, thawed
2 Tbsp. Land O' Lakes butter, melted
4 tsp. finely chopped fresh garlic
1/2 tsp. salt
1/2 tsp. ground allspice
1/2 tsp. dried thyme leaves
1/4 tsp. ground cloves
1/4 tsp. ground red pepper
Heat broiler.
Place beef on aluminum foil-lined broiler pan or shallow baking pan.
Combine all rub ingredients in a small bowl; mix well. Rub over beef.
Broil 4-6 inches from heat, turning once, until desired doneness (16-24 minutes). Remove beef to a cutting board; let stand 5 minutes.
To serve, slice beef diagonally into 1/4-inch slices
Makes 6 servings
