Good morning. Sue, I have a recipe for you that you can mix by hand using a wooden spoon if you like. It uses veg. oil instead of butter for it's fat. It is called Spiced Carrot Snack Cake. It has walnuts, raisins or dates in it. If this is it, it is yours if you want it or if you can fully describe the cake that you are seeking maybe we can help you better..
