Recipe: Spiced Carrot Snack Cake - Can this be it???

SPICED CARROT SNACK CAKE

1 1/4 cups all-purpose flour
1 cup granulated sugar
1 1/4 tsp baking powder
1 tsp salt
2 tsp cinnamon
3/4 cup vegetable oil
2 large eggs
2 tsp vanilla
1 cup grated carrots
1 cup bite-sized walnuts
1/2 cup of raisins or minced dates

Preheat oven to 325 degrees F. Grease well the bottom of an 8x8-inch square baking pan.

Mix the first 8 ingredients in a large bowl and blend well for about 1 minute.

Stir in the carrots, walnuts, and raisins or dates into the batter. Pour batter into prepared pan.

Bake at 325 degrees for 40-45 minutes.

Sprinkle with powered sugar on top when cooled or top with whipped cream.
