Just use your basic Pizza Dough recipe (if you don't have one, let me know and I will post my mother-in-laws recipe when I have a little more time to type). Separate the dough into fist-sized balls, flatten out as flat as you can get it, and put your favorite toppings in a little pile right in the middle of the dough. Then fold up egg-roll style and place the side with the seams down on the cookie sheet. Let rest for about 20 minutes or so. Then bake for 20-30 minutes or so, until they are golden brown.
