CAFE RIO SWEET PORK
4 lb. pork roast
20 oz. Dr. Pepper
1 cup brown sugar
1/4 cup granulated sugar
2 Tbsp. ADOBO sauce (you can find this in the latin food section)
1 heaping tsp each of Dry Ground Mustard
1 tsp minced garlic
Add all ingredients (except pork, of course) in a blender. Blend until well mixed.
Place pork in crock pot and pour sauce over it. (If you use more pork, double the sauce recipe, etc.) Cook on low for 6 hours and on high for 2 more hours.
Shred pork with forks.
*Costco sells frozen uncooked tortillas and when you cook them in the skillet they taste like the real thing. They are a little smaller so you just make two mini burritos.
CAFE RIO RANCH DRESSING
1 cup sour cream
1 cup mayonnaise
1 bunch of cilantro finely chopped (use a food processor if you have one)
1 package buttermilk ranch dressing mix
4 tbsp. green chile enchilada sauce
1 tsp. chili powder
1/2 tsp. garlic powder
juice of one lime
Mix together in a pitcher and shake it up!
