Recipe: Wild Aphrodite Rice (with pecans and apricots) (serves 2-4)

WILD APHRODITE RICE

1 tablespoon olive oil
1/4 cup celery, chopped into small pieces
1 large shallot, minced
1 cup water
1/2 cup uncooked wild rice
1 cup chicken broth
1/2 cup uncooked white rice
1 teaspoon dried marjoram
1 teaspoon dried thyme
1/4 teaspoon dried sage
1/4 cup pecans, coarsely chopped
1/4 cup dried apricots, julienne-cut
1 tablespoon orange zest

In a small sauce pot, heat olive oil to a sizzle. Saute celery and shallot until soft.

Add water and wild rice to sauce pot, and bring to boil. Cover pot and cook rice mixture for 30 minutes.

Stir in chicken broth and white rice, and bring to a boil. Add spices and bring to simmer in covered pot for 20 minutes.

Turn off heat; stir in pecans, apricots and orange zest to rice mixture and let sit in covered pot for 10 minutes, then serve.

Makes 2-4 servings
