Misc.Your idea seems like a good one, Celeste. I wouldn't eliminate the vanilla, which I think is essential for depth of flavor. You'd have to be careful about adding extra pineapple liquid to the dough or else it would end up soggy and underbaked. A teaspoon or two of pineapple juice probably wouldn't be too much liquid to add, but it wouldn't be enough to add much extra flavor. A pineapple extract would add lots of flavor without adding too much liquid, so that's what I would do to boost the pineapple flavor.
