MACARONI LAYERS
Preheat oven to 350 degrees F. Butter a shallow casserole dish.
FOR THE MACARONI LAYER:
8 ounces macaroni
2 tablespoons butter or margarine
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
1 egg lightly beaten
1 cup milk
1/2 cup grated Parmesan Cheese
Cook macaroni according to package directions. Stir in butter or margarine. Sprinkle flour, salt and pepper over macaroni. Toss well. Add egg and milk. Cook over medium heat, stirring constantly, until thickened. Stir in Parmesan Cheese. Place half of mixture in bottom of a buttered shallow casserole.
FOR THE MEAT LAYER:
1 1/2 pounds hamburger
1/4 cup finely chopped onion
1 egg lightly beaten
1/2 teaspoon salt
1/8 teaspoon pepper
1 (10 3/4 ounce) can condensed cream of tomato soup
tomato sauce (to serve) (recipe below)
Brown hamburger and onion. Drain off fat. Add egg, salt, pepper and 1/2 of the can of soup. Place over macaroni layer. Cover with remaining macaroni. Bake for 45 minutes. Serve with Tomato sauce.
FOR THE TOMATO SAUCE:
Remaining 1/2 can tomato soup
1 (8 ounce) can tomato sauce
1 teaspoon sugar
1/4 teaspoon basil
Combine and bring to a boil. Reduce heat to simmer for 3 minutes.
Servings: 6-8
