Recipe(tried): Low Fat Version of Houstons Red Cabbage

Side Dishes - Vegetables
Amy's red cabbage recipe was great, but I had to try a low fat version and it was sensational!! Here it is:

LOW FAT VERSION OF HOUSTON'S RED CABBAGE

1 Large head of red cabbage, very thinly sliced
1/4 cup of SMART BALANCE LIGHT, melted
6 Tbsp SPLENDA
2/3 Cup Paul Newman's light Balsamic Vinagrette salad dressing

Spray large pot and pour in melted butter over medium heat.
Add thinly sliced cabbage and saute until slightly wilted.
Add SPLENDA and toss to coat.
Add Newman's light BALSAMIC VINAGRETTE. Toss. Cover and Simmer until tender. Stir often.
No need to add any seasoning with this dressing which really adds an extra "kick" to the taste.
Serve WARM with crumbled pieces of goat cheese.
Bet you won't be able to stop eating it!!
