re: vinegar strength in old pickle recipes

Misc.
Years ago when many of those old recipes were written, the vinegar strenght was anywhere between 7% and 40% acididty, unlike our 4-5% acidity now. That is the difference in safety. The recipes now need 5% acidity vinegar to be safe.
